抹茶大理石戚风蛋糕
除了红曲之外,还有什么颜色的大理石花纹让人心动。抹茶,青翠的颜色,青涩的味道,很是让人惦念。只是,这抹茶粉好像有点因为保管不善略微变色,不过青茶的味道还在。应该不影响使用。
不要以为第一次很成功,就能保证第二次的成功。大理石纹的肌理完全是一种随机效果。很喜欢第一次的红曲纹理,而这一次的抹茶,就很一般般,有点小失望。而且,或许是因为拌和过程稍有耽误,最后的成品表面稍许有些下陷,一点小遗憾。剩下的,就只有抹茶的清香还算得上是一点安慰了。。。

  • 蛋黄30克
  • 细砂糖40克
  • 玉米油17克
  • 牛奶35克
  • 低筋粉45克
  • 泡打粉1/2小勺
  • 塔塔粉1/8小勺
  • 蛋白67克
  • 抹茶粉1小勺

Steps to make 抹茶大理石戚风蛋糕

  • 1.用料
  • 2.将15克细砂糖加入蛋黄
  • 3.搅打均匀
  • 4.加入玉米油与牛奶
  • 5.搅打均匀
  • 6.泡打粉与面粉混合,筛入蛋黄液中
  • 7.以不规则方式搅拌均匀
  • 8.塔塔粉倒入剩下的糖中,拌匀
  • 9.蛋白搅打成粗泡,分三次加入塔塔粉与糖的混合物进行搅打
  • 10.成带小弯勾的9分发状态
  • 11.取三分之一蛋白到蛋黄糊中
  • 12.稍微翻拌
  • 13.加入剩下的蛋白
  • 14.拌成均匀面糊
  • 15.取60克面糊,加入抹茶粉
  • 16.轻轻翻拌均匀
  • 17.将原味面糊倒入6寸活底圆模中
  • 18.倒入抹茶面糊
  • 19.轻轻划拉两下
  • 20.磕出大泡,震平表面
  • 21.放入烤箱,中下层,上下火140度,烤约40分钟左右
  • 22.出炉立即倒扣
  • 23.彻底冷却后翻面
  • 24.脱模
  • 25.翻面看看底部
  • 26.切块食用
