【牛奶蛋白羹】——非常非常细嫩的口感
其实这次做这个,是受到了‘双皮奶’的启发。
    我其实一直想尝试做双皮奶,不过一直都不明白,为啥双皮奶要先做出一层奶皮来,多折腾那一次有什么意义呢?两层奶皮,吃的时候能看的出来?还是说多折腾了一次,口感就不一样了?等等。。。因为一直有这样的疑惑,而且在网上也查不到想要的解释,所以这次做,只是大概参考了双皮奶的做法,却没有去折腾那一层奶皮。
    可是,做的时候还是出了点儿状况,放锅里的时候忘记在碗面扣上保鲜膜了。。。结果。。。小碗儿里的溢出好多,稍大的碗里的倒是没啥问题。。。拍了照片就赶紧吃啊,真是非常细嫩的口感,嫩的入口即化呢~~

Steps to make 【牛奶蛋白羹】——非常非常细嫩的口感

  • 1.取2颗鸡蛋并将蛋清和蛋黄分离开
  • 2.向蛋清中加入1汤匙细砂糖
  • 3.搅匀
  • 4.牛奶加热至边缘稍沸腾的状态
  • 5.倒入蛋清中
  • 6.搅匀
  • 7.过滤2次
  • 8.倒入容器中,约8分满
  • 9.放入已经烧开水的蒸锅中
  • 10.盖盖时留一道缝隙,开中火蒸约15分钟,关火后等待2~3分钟再揭盖
  • 11.出锅稍晾凉后放草莓酱和草莓装饰即可
