清蒸鲷鱼
鲷鱼肉质鲜嫩紧实,鱼刺少,腥气不重,是适合清蒸的海鱼。

Steps to make 清蒸鲷鱼

  • 1.鲷鱼去鳞去内脏去鳃洗净,沿着背脊剖开至中间大骨处。
  • 2.将鱼身用少许盐,料酒,姜,葱段腌制十分钟
  • 3.水烧开,将腌制好的鱼放入锅中,盖锅盖大火蒸六分钟后关火焖一分钟。(蒸鱼的时间根据鱼的大小来自行调整)
  • 4.蒸熟后,拿出控去盘子里的腥水和姜片以及葱段。
  • 5.将切好的葱段铺在鱼身上,在放枸杞装饰(注:枸杞可有可无,我是为了拍照放的),炒锅内热油,九成热时浇葱段上,在淋上适量的蒸鱼豉油,即可。
  • 6.鱼肉嫩不嫩关键在掌控好蒸的时间,还有就是一定要等水开了,在将鱼入锅蒸,水开后蒸鱼能很好的锁住鱼肉里面的水份,能使鱼肉鲜嫩Q弹。
