初秋润肺不能错过的一道汤——【莲子猪肚汤】
在潮汕地区,猪肚是非常抢手的食材,价格还挺贵,通常是猪肉、排骨的好几倍,即使这么贵还常常供不应求,于是在广东周边工作的潮汕人,回家前总喜欢买上一些猪肚带回去,自己吃的同时还分给亲戚朋友们。对于我这个在来深圳前包括猪肚在内一切猪下水都不沾的人来说,一度非常不理解。

直到好久之后,在众人的劝说下,我避着眼睛、捏着鼻子喝下了人生第一口潮汕猪肚汤,完全没有想象中的异味,有的是浓浓的胡椒味,似乎还挺鲜美,我一下子喜欢上了这味道。其实直到今天我还没弄清楚,我到底是因为猪肚的味道喜欢上那汤,还是因为胡椒的味道而喜欢的。要知道我可是辛辣控,一切辛辣刺激的调味品我都挺喜欢,啥胡椒、花椒、孜然、咖喱、、、、、辣椒就一般般。

这次买猪肚回来,本来也是准备做潮汕猪肚汤的,一想到天气虽然还很热,毕竟已经立秋,这秋季干燥,气燥伤肺,需要润燥、养阴、润肺,不适合吃辛辣的东西。可买都买了不能做不吧,想起“五色食物养心脏”中提及过白色润肺,家里刚好有特别适合这立秋后滋阴润肺的莲子,于是我就用了准备好的猪肚、龙骨和莲子一起炖了这道汤,应该适合这秋季养生吧。

Steps to make 初秋润肺不能错过的一道汤——【莲子猪肚汤】

  • 1.猪肚、龙骨洗净;
  • 2.锅中烧开水,下猪肚和龙骨焯水;
  • 3.焯过水后,将猪肚和龙骨再次清洗干净;
  • 4.猪肚切粗丝、姜切片,莲子泡水备用;
  • 5.猪肚和姜放锅中,加足量的水;
  • 6.大火烧开,打去浮沫;
  • 7.转小火炖1小时;
  • 8.1小时后,加入莲子继续炖1小时;
  • 9.炖好后,调入盐和少许鸡精即可。
