麻辣牛肉干
牛肉含有丰富的蛋白质,氨基酸,闲时炒点牛肉干,密封成小包装放冰箱里,佐酒也行,当小零食也可~巴适得板!

  • 香菜50g
  • 老姜200g

  • 辣椒面150g
  • 花椒面15g
  • 味精10g
  • 鸡精10g
  • 白糖80g
  • 熟芝麻100g
  • 菜籽油500g
  • 十三香5g
  • 15g

Steps to make 麻辣牛肉干

  • 1.做牛肉干最好用板子牛肉或包胎,先剃去表面的筋膜和油(别扔了,放冰箱里下次和牛筋一起烧)。
  • 2.切成大块加适量清水没过牛肉,冷水上灶,烧开后关中火煮二十到三十分钟,煮过心就关火。
  • 3.用温水冲洗干净。
  • 4.切成约0.3厘米宽,3~5厘米长的条。
  • 5.老姜切片,大葱切段,香菜切一刀把根部分离就行了。
  • 6.花椒和干辣椒用水清洗后泡约二十分钟。
  • 7.各种香料,粒状的拍破。
  • 8.加水泡约一刻钟。
  • 9.起锅倒油。
  • 10.冷油下锅,小火煎,要不停的搅动。
  • 11.炒五分钟后加入香料,继续小火煎,大约煎半个小时。
  • 12.香菜要提前捞出来。
  • 13.约半个小时后,开大火逼出油,关火滤出作料,再大火将油烧至八成热,关火冷却。
  • 14.油冷却至约三成热时,倒入牛肉丝,小火翻炒,这是刚下锅的状态。
  • 15.这是二十分钟后的状态。
  • 16.这是四十多分钟的状态,已经开始吐油了,注意全程小火。
  • 17.吐油后再炒五分钟,依次加盐,白糖,花椒面,十三香,鸡精味精,和匀。
  • 18.加辣椒面,和匀,尝一下咸淡麻辣,调味。
  • 19.总共炒了五十分钟左右,关火,最后加入熟芝麻。
  • 20.和匀起锅,麻辣鲜香,巴适得板!
  • 21.成品欣赏。
  • 22.用大盆子装起来,到外面去塑封。
