甩袖汤
“甩袖汤”在东北是“古老而又传统”的叫法,现在已经都叫“蛋花汤”了。但是细究起来,二者还是有区别的。“甩袖汤”一般不勾芡,还要有配料搭配,最关键的是操作方法,甩袖汤是把鸡蛋壳磕破一个小洞,用筷子搅一搅,然后把蛋液通过磕破的蛋壳的小洞甩到锅里,故叫做“甩袖汤”。而现在的“蛋花汤”都是把鸡蛋在碗里打成蛋液,然后淋入到勾薄芡的汤汁里,使凝固的蛋液漂浮在汤里形成了“蛋花”。

Steps to make 甩袖汤

  • 1.主辅料: 鸡蛋、西红柿、葱
  • 2. 把西红柿、葱切好,放入碗中备用。
  • 3. 锅烧开水。放入牛肉粉。
  • 4. 把鸡蛋磕破一个小洞。
  • 5. 用筷子搅一搅。
  • 6. 小火,把蛋液轻轻往锅里甩。
  • 7.要防止出现大块的蛋液,最好是细细的蛋液入锅。
  • 8. 加少许盐调味,即可关火。
  • 9. 把锅中的“甩袖汤”倒入备用的西红柿、葱花的碗中。
  • 10. 这就是甩袖汤成品。
  • 11. 分装后即可上桌。
