红豆羊奶布丁
洁白如雪的羊奶布丁与蜜红豆搭配不但颜色相互衬托,在味道上也相得益彰。舀一大勺入口,来不及细品,“滋溜”一下就咽下去了。想挖一勺再品,结果又是“滋溜”一下入肚了。后来,只敢挖半勺了,并有意在唇齿间停留几秒,这才真正地体会到了羊奶布丁的魅力所在。

Steps to make 红豆羊奶布丁

  • 1.原材料大合影:添葆纯羊奶250ml,中等个头鸡蛋2个;如果想吃甜的,再来10克细砂糖。
  • 2.准备一个大碗,将羊奶倒入大碗中。
  • 3.将鸡蛋清倒入羊奶中,蛋黄另做它用,此处不赘述。
  • 4.用蛋抽将蛋清与羊奶充分混合,即使打出泡沫也不要紧;这个就是羊奶布丁液。
  • 5.取一个小筛网,再取两个陶瓷碗,将羊奶蛋清融液过滤到碗中;泡沫及大块的蛋清就留在筛网中了,丢掉不用。
  • 6.将羊奶蛋清碗放在蒸锅里,表面无需蒙膜或者盖盘子,凉水上锅,小火慢蒸,上汽后蒸25分钟即可;为嘛不能用大火?因为用大火会让蛋白受热后疯狂上涨,表面不平,内部全是蜂窝状,口感就不嫩滑喽!蒸好后的羊奶布丁可撒上蜜豆趁热吃,奶香浓郁香、香甜爽滑。
