黄油小餐包
这种包子不难做,不要求面团搓得太精致,不过把黄油片插在上面烤还是第一次,一点小技巧,网上学来的。

  • 鸡蛋液1+3/4只量
  • 牛奶1/2杯
  • 酵母2/3小勺
  • 白糖2大勺
  • 食盐1/8小勺
  • 中筋面粉2杯
  • 黄油2大勺
  • 全蛋液1/4只量
  • 牛奶1/2大勺
  • 黄油2大勺
  • 厨师机1台
  • 烤箱1台

Steps to make 黄油小餐包

  • 1.最近买的厨师机,英文叫Kitchen Aid(图片摘自Walmart网页)。
  • 2.把鸡蛋2枚打散,大约取出1/4只的蛋液用作刷面,这样就不用再专为刷面打蛋了,肯定是用不完的。
  • 3.鸡蛋液1+3/4只量、牛奶1/2杯、酵母2/3小勺、白糖2大勺、食盐1/8小勺,调匀,加入中筋面粉2杯,开机和面,和成团后加入隔水热过的油,再和面。
  • 4.约15分钟,开4档,手指用油沾过,揪出一块小面团撑开基本能成薄膜就可以了。
  • 5.烤箱设置350°F约20秒,预热至手感温暖,关电,把面团入涂了油了碗里盖上保鲜膜,放烤箱,设置约1小时+20分钟。
  • 6.时间到后面团取出来,静置10分钟。
  • 7.搓圆后对切8等分。
  • 8.把小面团搓均匀,收好口。
  • 9.收口向下,放在撒了面粉的烤盘上,放入不开火的烤箱,静置30分钟。
  • 10.在面坯薄薄一层面粉,用专门的割面刀划一道深约1公分的口子。
  • 11.把无盐黄油切片,厚约2毫米,再对半切成两片。
  • 12.在刷面的鸡蛋上加入牛奶1/2大勺,搅拌均匀后准备涂表面。
  • 13.把黄油片插在面包上面,烤箱预热温度325°F。
  • 14.在面坯的上面刷一层蛋奶液,放入预热了的烤箱,先烤10分钟,取出转烤盘180°,烤6分钟,如果有可能的话在烤盘底或旁边放一小碟清水。
  • 15.烤至较深金黄色即可享用。Enjoy !
