Steps to make 凉拌扇贝边

  • 1.干扇贝边。
  • 2.抓半碗清洗一下,装碗里冷水浸泡一个小时。想缩短时间可以用温水浸泡20分钟。
  • 3.扇贝边泡发后会膨胀,多清洗几遍,顺时针搅一下,去掉贝壳及脏东西。
  • 4.准备食材。香菜和葱切碎,黄瓜切丝,蒜头剁碎,小米辣切圈。
  • 5.锅里烧点清水,倒1勺料酒,几片生姜,大火烧开,水开后倒入扇贝边。
  • 6.煮2分钟,再次烧开后即可关火。
  • 7.把扇贝边捞出来过凉水,这里的凉水可以是凉白开或者矿泉水。
  • 8.把过凉水的扇贝边捞出来,挤干水分,装到大碗里备用。
  • 9.铺上黄瓜丝和香菜。
  • 10.拿一个小碗,倒入蒜末、小米辣,1勺辣椒面。
  • 11.淋上滚烫的热油激发出香味。
  • 12.倒1勺生抽,1勺香醋,1勺蚝油,半勺白糖,适量葱花,搅拌均匀。
  • 13.把调好的凉拌汁倒入装扇贝边的碗里。
  • 14.搅拌均匀即可。
  • 15.成品。
