Steps to make 椒盐、肉松海螺卷

  • 1.500g面粉,温水275g,酵母3g。酵母先用水化开。此方一共做了18个海螺卷,椒盐和肉松各9个。
  • 2.水不要一次倒入面粉中,要预留15g左右的水量。和成粗糙面团后,用拳头蘸水扎面。直至预留出来的水用光。
  • 3.面团发至气泡充盈。
  • 4.面团通过揉搓来排气,最后揉搓成长条状。
  • 5.擀成椭圆状面片,约长10公分左右。用油刷轻轻刷一点油,不要太多。撒上少许椒盐。
  • 6.左边向中间折叠。
  • 7.右边向中间折叠。
  • 8.用刀背切出花纹。
  • 9.将面坯搭在筷子中央,两端对齐。
  • 10.双手各向相反的方向,旋转180度。
  • 11.取适量肉松,铺在面皮中央。注意四周留白。
  • 12.左边向内折叠。(同椒盐卷一样)
  • 13.右边向内折叠。(同椒盐卷一样)
  • 14.与椒盐卷不同的是,两端得用筷子压一下,以防止肉松跑出来。
  • 15.后面的步骤与椒盐卷一样,同样是压上花纹。
  • 16.全部做完,醒发至面坯体积变轻。
  • 17.开水上锅,上气后,蒸10分钟。肉松海螺卷出笼了。
  • 18.椒盐海螺卷出笼了。
