  • 梭子蟹500g
  • 大葱1个
  • 生姜1块
  • 大蒜1颗
  • 八角1块
  • 香叶4块
  • 桂皮1块
  • 花椒50g
  • 干辣椒50g
  • 啤酒500ml
  • 豆豉1勺
  • 郫县豆瓣1勺

Steps to make 香辣蟹

  • 1.梭子蟹洗净去腮对半开,用葱姜料酒腌制一晚。怕腥可以大量放葱姜。
  • 2.腌制好的梭子蟹去掉葱姜,清水冲洗一次,切口粘上生粉。
  • 3.锅中下宽油,用筷子试探有小气泡后,下梭子蟹,中小火慢炸。
  • 4.炸螃蟹的时候准备干辣椒,香叶,花椒,八角,桂皮,葱姜蒜,豆豉。豆豉剁碎,姜切丝,葱切段,蒜切蒜末。(我大蒜过敏所以没放)
  • 5.螃蟹炸到蟹脚变红即可捞出。
  • 6.锅里留底油,小火将一半葱段炸香。然后捞出葱段不要。
  • 7.下入香叶,花椒,干辣椒,八角,桂皮小火炒香。
  • 8.下入葱姜蒜,豆豉小火炒香。
  • 9.下入一勺郫县豆瓣炒出红油。
  • 10.下入炸过的梭子蟹,中大火翻炒两三分钟,让蟹均匀裹上豆瓣。
  • 11.加入一听啤酒,大火烧开。
  • 12.啤酒烧开后,按照自己的口味加入适量糖和盐调味。盖盖转中小火煮20-30分钟。最后开盖大火收汤。
  • 13.汤收浓后即可起锅。
