奶香迷你蛋糕仔
星期天在家整理烘焙的材料,发现低筋面粉只剩一点点了,就想干脆来做几个小蛋糕。因为材料不够,所以比君之的原方少了40%。我用的鸡蛋是小鸡蛋,去壳是35克左右。刚打发好鸡蛋,却接了一个电话,拌面糊的速度不够快,导致了面糊消泡。可见烘焙和谈恋爱是一样的,不能三心二意。

Steps to make 奶香迷你蛋糕仔

  • 1.准备好原材料。低筋面粉和奶粉混合后过筛备用。
  • 2.牛奶和黄油隔水加热至黄油融化成液体。也可以用微波炉加热。
  • 3.鸡蛋和蛋黄加入细砂糖,打蛋器高速打发。
  • 4.鸡蛋打发到蓬松,打蛋器提起,蛋液滴落不会马上消失,能画出花纹
  • 5.倒入过筛好的低筋面粉和奶粉
  • 6.从下到上快速翻拌均匀。然后倒入牛奶黄油,也快速拌匀。
  • 7.模具抹上一层薄薄的黄油,然后用勺子把面糊装入模具,七分满。纸杯我就没抹黄油了。
  • 8.事实证明蛋挞模具太浅了,加上面糊消泡,烤好只剩薄薄的一个蛋糕片,就不拍照献丑了。
