茄汁真鳕鱼块
今天做的这道菜我用的是在盒马买的带有MSC小蓝鱼标识的挪威北极鳕鱼,品质好肉质极为鲜美,简直太美味了!由于生长环境独特,挪威北极鳕鱼蛋白质含量高达百分之九十六,口感极为出众,它是北欧人餐桌上的“国民料理”,挪威人称其为“白色黄金”,被全世界美食爱好者成为最健康鱼类,最重要是太好吃啦!还不赶紧试试!

  • 番茄酱半碗
  • 玉米淀粉2勺

Steps to make 茄汁真鳕鱼块

  • 1.准备真鳕鱼块,我用的是这种独立包装的,不需要改刀,直接拆包装就能用,是宝宝版的,没有刺。
  • 2.将真鳕鱼块用清水反复冲洗干净,用手攥干水分,加入料酒,抓匀腌制15分钟。
  • 3.3.来调个面糊,面粉中打入一枚鸡蛋,加入适量黑胡椒粉和盐调味,加入一点点泡打粉,会让炸完的鳕鱼外皮酥脆。
  • 4.4.少量多次加入清水,搅拌至无颗粒,调好的面糊是稀稠适中的,提起蛋抽,面糊落下,蛋抽上没有过多面糊的状态。
  • 5.5.锅中倒入稍多油,大火烧热,放入一根筷子边缘冒出细密的小气泡改中火,银鳕鱼块表面包裹面糊下锅炸,不时翻面。
  • 6.6.炸至金黄盛出,转大火,全部倒入锅中复炸1分钟,捞出沥油备用。
  • 7.7.来调番茄酱汁,番茄酱中加入清水,比例约为1:1,再加入适量玉米淀粉和盐调匀即可,番茄酱要多一些,味道浓郁更好吃。
  • 8.8.锅中留一点点底油,倒入番茄酱汁。
  • 9.9.冒气泡后马上倒入炸好的银鳕鱼块,炒匀,每一块鳕鱼块包裹番茄酱汁,关火。
  • 10.10.盛盘,撒白芝麻和香葱碎装饰即可。
  • 11.好吃。
