腌制雪里蕻
我们这里冬天还是比较冷的,种雪里蕻比较合适,既可以吃新鲜的,也可以用来腌渍,自己种的菜,自己腌渍咸菜,既安全又放心。

  • 花椒2小匙
  • 大茴香籽1小匙
  • 小茴香籽1小匙
  • 二锅头1/2杯

Steps to make 腌制雪里蕻

  • 1.在后院种的雪里蕻,长成后收割;
  • 2.把雪里蕻洗净、沥水;
  • 3.放在大扁篱上风干后,将雪里蕻打成结后先放一层雪里蕻,撒一层盐。再放一层菜,再撒一层盐,静置12-24小时;
  • 4.准备好八角2朵、花椒2小匙、小茴香1小匙、大茴香籽1小匙,把坛子洗净及风干,里面抹一层高度酒如二锅头以消毒;
  • 5.烧开一大壶水,放海盐适量至饱和、八角2朵、花椒2小匙、小茴香1小匙、大茴香籽1小匙,转圈搅拌均匀至盐多到不能再溶入热水里以表示饱和,晾凉;
  • 6.把菜结放入坛子里;
  • 7.把放晾后水连调料倒入坛子里,再加二窝头1/2杯,搅拌几下,倒满盐水后在菜上面加叠厚的厨房纸压住浮起的菜,以确保盐水能完全没过菜面,然后盖上盖子,贴上日期,约两周就可以食用。
