  • 1.把蛋黄和蛋清分离。盛放蛋清的容器必须是无油无水,这是决定蛋糕成功的关键。
  • 2.准备好120g低筋面粉。可用家中的普通面粉和玉米淀粉4:1比例配制。
  • 3.称量好白砂糖。
  • 4.蛋黄盆中加入定量的绵白糖、色拉油和牛奶。
  • 5.蛋清中加入盐和称好的白砂糖。
  • 6.用打蛋器把蛋清迅速搅打成中性发泡。这一步很关键!通过观察提起打蛋器时倒挂的小三角来判断打发程度。
  • 7.将蛋白的三分之一倒入蛋黄糊中翻拌均匀。
  • 8.再倒入剩余的三分之二蛋白中。
  • 9.迅速轻快的动作,上下翻拌均匀。
  • 10.倒入八寸蛋糕模具中,震两下,将大气泡震出。
  • 11.放入预热好的烤箱中下层,160度烤10分钟,转140度再烤50分钟。
  • 12.烤好取出,放置烤架上倒扣晾凉。
