翡翠腊八蒜
这道菜背后的故事~:泡腊八蒜是一道主要流行于北方,尤其是华北地区的汉族传统小吃,是腊八节节日食俗。在阴历腊月初八的这天来泡制蒜。其实材料非常简单,就是醋和大蒜瓣儿。做法也是极其简单,将剥了皮的蒜瓣儿放到一个可以密封的罐子,瓶子之类的容器里面,然后倒入醋,封上口放到一个冷的地方。慢慢地,泡在醋中的蒜就会变绿,最后会变得通体碧绿的,如同翡翠碧玉。老北京人家,一到腊月初八,过年的气氛一天赛过一天,华北大部分地区在腊月初八这天有用醋泡蒜的习俗,叫腊八蒜。至于,吃腊八蒜的好处就太多了,大家还是上网查吧。
现在做腊八蒜到春节正是吃的时候,饺子,包子,面条,再吃上几个腊八蒜,小日子美美哒。

Steps to make 翡翠腊八蒜

  • 1.准备大蒜,米醋,瓶子必须干净,无油无水
  • 2.先把外皮去掉,双手洗净,依次去掉蒜皮
  • 3.发芽,残疾,磕碰过的大蒜挑出来
  • 4.包好的大蒜直接放到瓶子里,千万不要水洗
  • 5.直接倒上米醋,没过大蒜,8成满就行,因为第二天就会发酵,起泡,以免溢出
  • 6.盖子上一定放上保鲜膜或干净的塑料袋,因为醋有腐蚀性,如果是铁盖,盖子上会生秀,泡出的味道就会变差,盖上盖子就好了,泡蒜就这么简单
  • 7.这是第二天的腊八蒜,仔细看,就能看到有小气泡产生
  • 8.这是第四天的腊八蒜
  • 9.这是第六天的腊八蒜
