紫菜肉松鸡蛋卷是澳门的十大特产手信之一,偶尔碰上朋友要去澳门旅行,就会带上几盒回来分享,孩子每次吃的都停不下来,嚷嚷着让我给山寨一下,借助万能的平底锅,烙上鸡蛋饼,再卷上自己做的肉松,做出来紫菜肉松鸡蛋卷的确好吃,紫菜带着深海的神秘气息,一口蛋卷一口肉松,越嚼越香,鲜香无比,茶余饭后的美味,一卷接着一卷,怎么吃都不腻。这不,配方做的是21个份量,一边做一边吃,到拍照的时候就剩下十个了,再不拍照马上要吃完了。

  • 320克
  • 白砂糖40克
  • 黄油20克
  • 鸡蛋2个
  • 生鸡蛋黄1个
  • 自制肉松70克
  • 海苔3大张
  • 沙拉酱30克

Steps to make 紫菜肉松鸡蛋卷

  • 1. 取一只干净的盆子放入切小块的黄油和白砂糖
  • 2. 隔热水融化黄油和白砂糖(建议冬天用植物油更好,黄油凉了容易结块)
  • 3.低筋面粉过筛
  • 4.面粉里加入水,搅拌成混匀的面糊
  • 5.面糊里加入2个鸡蛋和一个蛋黄,多余的蛋清留出另作他用
  • 6. 面糊中加入融化的黄油和白砂糖液体
  • 7.面糊过筛2次,放一边静置30分钟
  • 8. 不粘锅里放入2汤勺的面糊(冷锅加入面糊)
  • 9.小火加热,面糊凝固到变成蛋饼冒泡的时候用硅胶刮刀铲一下边缘,蛋饼能轻松滑动就可以出锅了(准备一块湿毛巾,煎好蛋饼的的锅放湿毛巾降温,煎出来的蛋饼不容易有焦斑)
  • 10.紫菜剪成3cm宽度
  • 11.蛋饼切成5cm宽度,上下的2张修去多余的边角
  • 12. 蛋饼的光滑面朝上,挤上沙拉酱再贴上一张紫菜
  • 13.蛋饼翻面,左侧放上肉松,从左向右卷起来
  • 14.紫菜肉松鸡蛋卷就这么做好了,收口处可以用沙拉酱黏合
  • 15.这个紫菜肉松卷是香软的口感,如果要做酥脆的要用蛋卷机才能做
