Steps to make 红丝绒旋风卷

  • 1.将玉米油,牛奶放入容器中充分搅打乳化。
  • 2.待两者充分融合,略显粘稠筛入低粉,Z字搅拌均匀。
  • 3.将蛋黄加入到面糊中,搅拌均匀。
  • 4.蛋白放入无油无水的容器中,加入几滴柠檬汁,分次3次加糖,将蛋白打发至大弯勾。
  • 5.取三分之一蛋白加入到蛋黄糊中,翻拌或者用蛋抽捞拌,将其混合均匀。
  • 6.再将蛋黄糊全部倒回到蛋白中,同样翻拌或捞拌混合均匀。
  • 7.将混合好的蛋糊分出150克左右加入红丝绒精华,翻拌均匀。
  • 8.烤盘中放置一张油纸或者油布,先将原味蛋糊倒入模具中抹平。
  • 9.再将红丝绒蛋糊装入裱花袋中,无需裱花嘴,将其挤在原味蛋糊上,重点!用手指,沿着烤盘中回来划动,滑动过程中要让充分,要划到烤盘边缘。将烤盘调转方向,同样手法再划动一次。轻震烤盘,抹平。
  • 10.烤箱160度,18到20分钟。烤箱温度要根据自己烤箱脾气酌情调节哦。
  • 11.出炉后无需倒扣,撕掉油纸,待它温热时卷起来,因为没有涂奶油,稍微定型就可以。
