Steps to make 苏式紫薯月饼

  • 1.紫薯馅:将黄油、细砂糖、奶粉和盐放入容器里,隔水加热软化黄油。
  • 2.加入牛奶搅拌均匀。
  • 3.离火后加入蒸熟去皮压成泥的紫薯泥,搅拌均匀。
  • 4.加入糯米粉,混合拌匀。
  • 5.炒锅加热后,倒入食用油。
  • 6.倒入拌合均匀的紫薯泥。
  • 7.用中小火均匀翻炒紫薯泥。
  • 8.炒至紫薯泥颜色变深且浓稠有光泽度即可,将炒制好的紫薯泥放入容器中冷却。
  • 9.水皮面团:将中筋面粉、猪油、糖粉、盐放入容器中,搅拌均匀后分次加入水,和成柔软的水皮面团。
  • 10.盖上保鲜膜,松弛15-30分钟。
  • 11.油皮面团:将低筋面粉与猪油快速混合揉匀和成酥泥状的面团。
  • 12.盖上保鲜膜,松弛30分钟。
  • 13.面团与馅料分割:1.水皮面团:将松弛好的水皮面团分成20份,每个15克,滚圆备用。2.油皮面团:将松弛好的油皮面团分成20份,每个10克,滚圆备用。3.馅料:将紫薯馅分成20份,每个25克,滚圆备用。
  • 14.苏式紫薯月饼制作:将水皮面团用手压扁,取一油皮面团放在水皮面团中央。
  • 15.接着以拇指压住油皮面团利用虎口将水皮面团往上推按。
  • 16.捏紧收口。(一定要将水皮面团完全包裹住油皮面团,否则烤好的成品层次不明显。)
  • 17.将包好的水油皮面团压扁,迅速擀成长椭圆形。
  • 18.由外往内卷成长筒状。
  • 19.盖上保鲜膜,松弛15分钟。(第一次擀卷松弛)
  • 20.将第一次擀卷松弛好的面团收口朝上垂直摆放,用手掌略微压平再次擀平。
  • 21.由外往内卷。
  • 22.卷成长筒状。
  • 23.盖上保鲜膜,继续松弛10分钟。(第二次擀卷松弛)
  • 24.将第二次擀卷松弛好的面团收口朝上横放,用手指往中央压下,再用两指捏合两边的面团。
  • 25.再次用手掌压平面团,擀成中间稍厚四周稍薄的水油皮圆面皮。
  • 26.将分割好的紫薯馅放在擀好的水油皮圆面皮中央。
  • 27.以拇指压住馅料利用虎口将水油皮面团往上推,捏紧收口。
  • 28.收口朝下,用手将包好的苏式紫薯月饼坯略微压扁,摆入烤盘
  • 29.收口朝下,用手将包好的苏式紫薯月饼坯略微压扁,摆入烤盘。
  • 30.放入提前预热180度的烤箱中,烘烤25分钟左右,至饼皮起鼓微上色即可。
