紫薯青包子(鼠曲草)
清明时采摘的鼠曲草焯水后冷冻在冰箱里,拿出来解冻后和面做了包子馒头,筋道又韧性,感觉比青团还要好吃。

  • 1.鼠曲草清洗干净,下沸水锅焯水,捞出过凉(这些是刚采摘时做的,现在就是解冻即可)。
  • 2.用料理机打细。
  • 3.面粉、酵母和白糖混合,用鼠曲草汁和成光滑面团,盖湿布放温暖处发酵。
  • 4.紫薯去皮蒸熟,加牛奶压成泥。
  • 5.分成小份揉成团。
  • 6.发酵好的面团。
  • 7.面团取出在案板上按揉排气,加了鼠曲草的面团韧性很好,从切口处也可看出。
  • 8.分成小份。
  • 9.压扁,擀成中间厚四周薄的小圆片。
  • 10.放上紫薯馅。
  • 11.包成包子。
  • 12.放到铺了玉米叶的笼屉里二次饧发。
  • 13.还做了青馒头。
  • 14.饧发好的包子冷水上锅蒸,水开上汽后转中火15分钟,关火虚蒸5分钟开盖。
  • 15.筋道韧性的馒头。
  • 16.包子也要美美哒。
