Steps to make 法式炖蛋

  • 1.准备蛋黄7个,差不多120g
  • 2.在蛋黄里加入60g糖
  • 3.在另一个锅里倒入750g淡奶油(我多倒了20g,所以牛奶少放20g)
  • 4.再加入牛奶250g
  • 5.加入剩余的60g糖
  • 6.将100g奶油混合物倒入蛋液里,搅拌均匀(这样做是为了奶油烧开之后倒入蛋液里不变成蛋花汤)
  • 7.将奶油混合物烧开
  • 8.把烧开的奶油混合物倒入蛋液里,快速搅拌
  • 9.过滤一遍
  • 10.装入模具
  • 11.放入烤箱,上层150°,下层200°,水浴法, 烤20分钟
  • 12.完成
