Steps to make 香辣蟹

  • 1.梭子蟹两只洗净,一只分切成4块备用。
  • 2.生姜切丝,蒜切末,小葱分开切,底部切小段,上面切长段,面粉和豆瓣酱备用。
  • 3.锅里放油烧热。
  • 4.把切好的蟹裹上面粉。
  • 5.放入热油锅里煎炸至定型才能翻动,这样肉和膏才不会散。
  • 6.然后再把蟹推至锅边,热油里放入葱白,蒜,生姜炒香。
  • 7.再放入豆瓣酱炒香。
  • 8.再把蟹翻炒至调料里。
  • 9.放入蟹壳。
  • 10.倒入适量的清水。
  • 11.放入生抽,老抽,料酒,蚝油翻匀。
  • 12.盖上锅中小火盖焖5分钟。
  • 13.放入少许盐和葱段调味增香。
  • 14.出锅装盘。
