麻辣牛肉干

Steps to make 麻辣牛肉干

  • 1.牛肉用清水浸泡,清洗掉部分血水,分割成拳头大小的肉块。凉水下锅,加入姜片、葱段、料酒和几粒花椒去腥,大火烧开后撇干净浮沫。
  • 2.放入炖肉料包,适量生抽和少许食盐,盖盖中火炖制1小时。
  • 3.牛肉炖好后凉透备用。
  • 4.牛肉顺着纤维切成小拇指粗细的条,我是先顺着纹理切成片,再斜着切的,吃的时候容易咬烂。
  • 5.平底锅中加入油,放入葱姜,香菜梗小火煸干,用煸香的油炸制牛肉。
  • 6.捞干净香料,下入牛肉条中小火炸制。火不要开太大,防止牛肉被炸糊。根据自己的喜好控制炸制时间,喜欢干一些就多炸制一会。牛肉炸至外表变焦后加入一小把冰糖,煸炒至冰糖基本融化,加入一小碗卤牛肉的汤汁,中小火继续炖煮。
  • 7.锅里汤汁基本收干,只剩底油时,根据个人口味加入花椒面。
  • 8.根据个人口味加入辣椒碎、食用盐。
  • 9.小火翻炒均匀,关火前再撒上芝麻提香即可。
  • 10.放凉后味道更佳。
