外脆内软---水果蛋白酥
蛋白酥就像个巨型的果汁软糖,外表是松脆的蛋白酥皮,内里却香甜耐嚼。鸟巢的外形,顶部配上奶油和新鲜水果,味觉、视觉都是纳闷清新亮丽。看似花俏,其实是一道典型的法式点心,用作餐后甜点或者下午茶的茶点都是很不错的选择。

  • 柠檬汁3至4滴
  • 淡奶油150毫升
  • 砂糖15克

Steps to make 外脆内软---水果蛋白酥

  • 1.蛋白加入几滴柠檬汁,低速打发。
  • 2.蛋白呈粗泡状。
  • 3.分次加入150克细砂糖,中速打发。
  • 4.打至干性发泡,约为9分发。
  • 5.打发的蛋白糖霜装入挤花袋。
  • 6.用中号星形裱花嘴挤出直径5厘米左右的圆盘,圆圈底部填充满;沿圆盘的边再重叠一层挤出鸟巢形。
  • 7.烤箱预热100度,烘烤90分钟,烤完置于烤箱内30分钟,然后取出凉透。
  • 8.淡奶油摇匀倒入无水无油容器中,加入细砂糖中速打发。
  • 9.打至湿性发泡,约为7分发。
  • 10.裱花奶油装入挤花袋中。
  • 11.裱入已经冷却的蛋白霜鸟巢。
  • 12.用新鲜的草莓、蓝莓装饰即可。
