Steps to make 蛤蜊蒸蛋

  • 1.蛤蜊用淡盐水泡一夜,盖上一个盘子晃动十几下。若是怕不干净,可以放点白酒后晃动。烧开水,放入蛤蜊,开口一个捞一个,直到全部开口。
  • 2.鸡蛋充分打散,兑入等量的纯净水(温开水也可以,至于比例看自己喜好,我觉得一比一比较香,多点水就比较嫩。),加入盐充分搅拌均匀。这是蛋羹滑嫩的基础。
  • 3.蛤蜊摆在炖盅内,或者碗里。
  • 4.滤网过滤蛋液入容器内。包上保鲜膜用牙签戳几个小洞,或者盖上蛋盅盖子。中小火蒸8分钟-10分钟即可。
  • 5.红椒,豉油,香油,兑好
  • 6.蒸好的蛋羹吃的时候淋上步骤5中的料汁即可。
