月圆中秋----------【广式五仁月饼】
连续做了两天月饼,一部分送人了,还网购的小包装,月饼装起来还像那么回事,自己看着很漂亮,只是本人照相技术太差,无法拍出漂亮的照片。这次的五仁馅是网购的,本想自己做五仁馅,没有时间外出采购,因为看店走不开,五仁馅太甜了,以后还是自己做五仁馅。

  • 中筋面粉210克
  • 转化糖浆150克
  • 玉米油50克
  • 枧水4克
  • 鸡蛋1个(刷表面)

Steps to make 月圆中秋----------【广式五仁月饼】

  • 1.饼皮原料备用;
  • 2.转化糖浆,枧水,食用油倒入大碗内混合,搅匀;
  • 3.放入面粉
  • 4.混合成面团;
  • 5.包上保鲜膜醒一小时;
  • 6.醒好的面团分成20g一个,五仁馅分成30克一个;
  • 7.取一面团按扁,放入五仁馅;
  • 8.像包油酥一样,利用右手虎口慢慢收口;
  • 9.将包好的月饼,搓圆,放面粉中滚上一圈,再放到手心重新搓一遍;
  • 10.模具中撒面粉,将圆球套入模中,朝下按出月饼即可;(按的时候不要太用力了);
  • 11.将所有的月饼做好,码入放了锡纸的烤盘上;
  • 12.喷上一层清水;
  • 13..烤箱预热200度,中层,20分钟。烤5分钟后,拿出刷上一层全蛋液;
  • 14.再继续烤15分钟,取出晾凉即可。(做好的月饼表皮是硬的,放置12个小时回油后,即可食用)!
