抹茶馅冰皮月饼
爱上抹茶没商量,我们家的冰皮月饼重头戏还是抹茶,这次不同的是,把抹茶加到馅里面了。这月饼也是前几天做的了,留下少少的几个,其它的都打包送人了。总感觉做多少都不够分,我这几天一直在很努力地做月饼,可是一个人的力量太单薄,生产的月饼总是杯水车薪,一人送十几二十个,很快就没了,而且我也没那么大的力气炒太多馅料,炒锅又小,炒好的成品最后只得500--700克的馅料,每次做个月饼馅加上煮好炒好起码得花上一两个小时的时间,包完一盘月饼馅料很快就没有了,汗啊!

话说会做月饼也不是好事,熟的不熟的朋友都会主动开口要月饼,我是给也不是不给也不是,并不是说我小气不舍得给,只是一个人的能力真的很难全部都送,有些一年都没聊过一次天的朋友,一快到中秋就在QQ上问我有没有月饼,要不就是离得很远的朋友或同学叫我给他们寄月饼,而且都是平时很少联系的同学朋友。问月饼的人多,我一个人就算通宵做也不够分是不是?好为难啊!怎么办好?我又要带孩子,真的没那么多空闲又炒馅又做月饼到处送啊!亲们,请你们原谅我吧!我真的不是不想给,只是我真的很为难。

话说要是买现成的馅料来做会省事好多,可是买来的馅料做出来的月饼跟市售的又有何区别,那还不如直接去买市售的月饼吃就好了,还做来干嘛呀?送亲戚朋友最重要的也是那份心意,用心了,人家会觉得更加珍贵无比。所以,我一直在很用心的做每一个月饼,我也希望把我的爱心月饼送给我珍惜的每一个亲戚朋友,而不会去买现成的馅料忽悠你们,就算要买馅料,我也是选品牌的买,不会专挑便宜货,我的原则是,要么不送,要么就送好的。

  • 粘米粉70g
  • 澄面40g
  • 牛奶360g
  • 糖粉85g
  • 色拉油45g
  • 白豆沙250g
  • 抹茶粉3g

Steps to make 抹茶馅冰皮月饼

  • 1.在盆里倒入牛奶、糖粉、色拉油;
  • 2.用筷子搅拌均匀;
  • 3.倒入糯米粉、粘米粉、澄面,充分搅拌均匀;
  • 4.搅拌成均匀的稀面糊,过筛两次,静置30分钟;
  • 5.静置30分钟后,将盆放入蒸锅中,表面盖上保鲜膜,大火蒸约25分钟至面糊全熟。
  • 6.蒸熟的面糊,用筷子使劲的搅拌至顺滑,放冷后,即是冰皮了。
  • 7.白豆沙中加入抹茶粉;
  • 8.揉匀,即成为抹茶馅了;
  • 9.把冰皮分成25g的小份,揉圆,备用;抹茶馅也分成25g一个的小份,揉圆,备用;
  • 10.在手上拍点糕粉防粘,然后将冰皮放在手心压扁,放上一粒豆沙馅;
  • 11.用冰皮把抹茶馅包起来,慢慢往上推,直到把抹茶馅完全包裹住,收口,揉圆;
  • 12.在50g的月饼模具中撒点糕粉,让糕粉均匀粘在模具壁上,把多余的糕粉倒出来(这样可以 方便脱模),把包好的抹茶冰皮面团放进模具里面;
  • 13.压成月饼的形状,脱模即可;
  • 14.做好的抹茶馅冰皮月饼,放入保鲜盒内,放在冰箱冷藏保存,3天内吃完。
