彩色波点蛋糕卷
儿子学校又亲子活动了,准备了些蛋糕卷给他带去当点心与大家分享,这次做了波点的可可味蛋糕卷,因为怕变质,所以这次没有卷奶油,就刷了层蜂蜜。

Details of ingredients

  • 低筋面粉75g
  • 鸡蛋黄3个
  • 鸡蛋清4个
  • 细砂糖(蛋清打发)30g
  • 细砂糖(蛋黄糊)35g
  • 色拉油40g
  • 60g
  • 玉米淀粉1小勺
  • 朗姆酒2滴
  • 可可粉8克
  • 食用红色素1滴

Steps to make 彩色波点蛋糕卷

  • 1.准备材料,蛋清蛋黄分离
  • 2.蛋黄中加入35g细砂糖用打蛋器打至起泡
  • 3.再依次加入水、色拉油、朗姆酒搅拌均匀
  • 4.蛋黄糊中筛入低筋面粉和玉米淀粉
  • 5.用打蛋器打成均匀的流线面糊
  • 6.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 7.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 8.再将拌好的面糊倒回剩余三分之二蛋白中
  • 9.翻拌成细腻糊状
  • 10.取小份面糊装入裱花袋,尖角剪一小口
  • 11.在铺了油纸的烤盘上挤出原味小点,为了点点标准点,我用儿子的田字格垫底下
  • 12.再滴一滴食用红色素进裱花袋,和成粉色面糊
  • 13.同样间隔挤出粉色小点,放入预热好170度的烤箱1.5分钟拿出
  • 14.这个时候在剩下的面糊里筛入可可粉,翻拌成均匀的可可面糊
  • 15.点点烤好拿出,将可可面糊倒入烤盘,用刮刀抹平蛋糕糊表面
  • 16.拿起烤盘,震出大气泡,放入预热好170°的烤箱,上下火,烤15分钟左右
  • 17.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去
  • 18.等蛋糕体稍凉,换一张干净的油纸倒过来,削去蛋糕四边,以2cm的间隔在蛋糕片上划出浅浅的刀痕,用刷子在蛋糕体上刷上蜂蜜
  • 19.慢慢卷起来,扎好两边放冰箱冷藏1小时定型
  • 20.冰箱拿出
