潮汕97女孩教你做免蒸免烤低卡低脂又高颜值的冰冰凉凉月饼

转眼间还有19天就要中秋节啦~中秋月饼是必不可少的一个甜品,寓言吃了一家人团团圆圆,但是很多人吃腻了传统月饼,感觉太甜了不想吃,那么今天我们就来学习一个新花样的月饼,低卡低脂高颜值冰冰凉凉的冰皮月饼吧!虽然我也是第一次学做,但是掌握了很多技巧,所以分享给大家一起相互学习交流。
文字步骤有点多请耐心看完,里面都是我学到的一些经验和技巧一一都说得很详细!

Steps to make 潮汕97女孩教你做免蒸免烤低卡低脂又高颜值的冰冰凉凉月饼

  • 1.首先准备冰皮粉做月饼皮。然后准备紫薯、红薯、白砂糖、炼奶、做月饼馅料用(这里可以根据个人喜欢包其他的,像南瓜、山药、香芋等这些也可以的做法都是一样的)。另外准备蝶豆花、柠檬调月饼的颜色。(如果觉得麻烦也可以不用,就直接做白色的也可以)。
  • 2.我们先来准备月饼馅料,将紫薯、红薯去皮切薄片上锅蒸15-20分钟左右即可(尽量切薄一点然后熟也节约时间)。
  • 3.蒸紫薯、红薯的时间来准备月饼皮、准备三个碗分别加入60g的冰皮粉,再准备两个碗放入适当的蝶豆花,另一个放一片柠檬变色备用。
  • 4.开始弄月饼皮,水和冰皮粉的比例是1:1,记得水一定要100度°把冰皮粉烫熟了。一开始太烫了用筷子搅拌均匀然后甚微凉一点再用手去柔月饼皮。
  • 5.将三种颜色柔至光滑放置一旁备用。
  • 6.冰月弄好了,现在来调蒸好的紫薯红薯馅料,分别加入适当的炼奶和白砂糖均匀捣碎,如果太干可以加一点适当的牛奶(不喜欢太甜的可以少放点炼奶和白砂糖,因为番薯本身有点甜度的)。
  • 7.将捣碎的紫薯、红薯弄均匀的小球备用,小球不需要太大,根据你月饼模具的大小可以对比一下,我这个一开始搓太大了,后来又重新弄小一点了,因为太大了月饼模具装不下压不了。
  • 8.准备好馅料后,将刚刚柔好的冰皮用手成搓成长条后在面板上散一些熟粉,(熟粉你买冰皮粉的时候有套餐一起的,熟粉就是炒熟的糯米粉,可以直接吃的)再切一小块一小块。
  • 9.然后把每一块冰皮赶成圆片,不用工具用手拧也是可以的,如果觉得太黏了可以弄一点粉在冰皮上面然后一直转把他拧大(注意皮一定要赶得均匀,不然有的薄有的厚等下压的时候那个馅容易漏出来)。
  • 10.放入紫薯馅或是红薯馅包起来,也可以紫薯和红薯各一半包起来,这样就比较好看。
  • 11.搓圆后可以滚上一成熟粉,这样不会粘着模具。
  • 12.最后就用月饼模具压成形状就可以啦~(这里要注意的是月饼模具要摸一下油才容易脱落,不然冰皮粉也会粘着月饼模具不好压出形状来,我刚开始做第一个就是没有刷油,然后就月饼皮粘着模具了,然后我做第二个就刷了一下油一下子就脱落啦~)第一次压有点生手,多压几次就熟练了,建议最后做好的冰皮月饼放在冰箱冷藏一下口感会更佳美味哦!冰冰凉凉的吃起来很舒服,甜而不腻,超级好吃哦!
  • 13.我做了紫薯馅、红薯馅和紫薯红薯一起的馅料,这样切出来严重很高,我的馅料做的太干了,所以建议你们在做馅料的时候觉得太干了可以放一点牛奶搅拌到无颗粒,这样做出来的馅比较好吃口感又好。
  • 14.然后可以根据个人喜欢压不同的形状出来,这样做的月饼显得比较鲜艳有食欲。
