  • 1.羊肉切大块,用清水浸泡两小时,冷水下锅。
  • 2.不要搅动,大火烧开。
  • 3.开锅后改小火,慢慢打干净浮沫。尽可能少打去原汤。
  • 4.不要搅动。打沫子需要时间,打干净为止,直到汤色清澈透明。
  • 5.打净浮沫的样子。
  • 6.这时可以放姜片、花椒,小火慢炖一个小时后放盐,再炖半小时左右即可。
  • 7.成品。捞出装盘,可用蒜泥蘸食。
