水煮肉片
水煮肉片是一道汉族新创名菜,起源于自贡,由自贡名菜,水煮牛肉变来,发扬于西南,属于渝菜、川菜中著名的家常菜 。其起源于上世纪30年代, 自贡名厨范吉安(1887 -1982年),创新出风味突出的水煮肉片 。因肉片未经划油,以水煮熟故名水煮肉片。

肉味香辣,软嫩,易嚼。吃时肉嫩菜鲜 ,汤红油亮,麻辣味浓,最宜下饭,为家常美食之一。特色是"麻、辣、鲜、香"。

    • 3.用水焯一下,捞出控干水分!
    • 4.锅里适量油,郫县豆瓣酱适量翻炒!
    • 5.倒入食材翻炒,炒好出锅!

    • 7.肉适量切薄片,蛋清,淀粉,抓渍均匀!
    • 8.锅里适量油,肉炒熟,盛出备用!
    • 9.锅里适量油,豆瓣酱适量,炒出红油!
    • 10.加入适量水,倒入肉片,盐,胡椒粉,耗油,味素,炖煮开!
    • 11.倒入铺好的容器里,肉片上面撒适量蒜末,香菜!
    • 12.锅里适量油和红油(红油也叫辣椒油,家里有老人我没放红油),适量麻椒粒, 花椒粒炒香!
    • 13.倒入适量干椒,炒出红油,倒入肉上面!
