Steps to make 椒盐芝麻酥饼

  • 1.首先要做油酥:平底锅烧热之后放入猪油,等油化开之后倒入50克面粉,小火,不断翻炒
  • 2.等锅子里的面粉炒成黄蜡蜡的的颜色了,倒入椒盐粉,炒匀之后放凉冷却备用
  • 3.制作面团:面粉倒入一半开水,先用筷子快速的搅拌,搅成棉絮状后继续倒入另一半开水搅拌,待到面絮的温度能下手了,用手揉面,盐也放进去
  • 4.揉面就是重复手在洗衣板上搓衣服的动作哈!使点力气!用力大,揉搓的时间久,做出的柄也就越好吃!(为啥东北的饼饼比南方的饼饼好次内~东北的吕汉纸都是人高马大的~手劲大、力气无穷大啊~所以揉出的面筋斗呀~这是咱们江南小吕纸不能比滴~)
  • 5.面团光、手光、台面光,三光了之后面就搞定了,揉成圆团,盖上盖子,静置15分钟
  • 6.面团等分成三份,台面上滴些植物油,防止黏连!用擀面杖擀开,刷上1/3冷却之后的油酥,再撒些白砂糖(不稀饭甜的可以不要撒糖)
  • 7.接着卷成长条状
  • 8.将长条状面团螺旋的卷起来,随后压扁,用擀面杖擀成圆形
  • 9.饼胚表面刷少量水,撒上芝麻,两面刷上适量植物油放入平底锅或者电饼铛,两面烙成金黄色就搞定了
