鸡蛋皇冠吐司
重鸡蛋的面包,膨胀力好惊人噢~

此配方的面团超级湿的,请不要随意加面粉~

  • 45g
  • 60g
  • 干酵母1茶勺
  • 高粉250g
  • 奶粉10g
  • 2.5g
  • 黄油40g

Steps to make 鸡蛋皇冠吐司

  • 1.把所有材料混合均匀(除黄油),浸泡5-10分钟,让面粉吸吸水。
  • 2.揉至扩展阶段加入黄油继续揉
  • 3.揉至出膜(面团还是有些许粘手,没关系,出膜就好了~)
  • 4.滚圆面团放入盆中,盖上保鲜膜发酵至2-2.5倍大
  • 5.对面团进行排气,然后将面团等量分成2份,松弛15分钟。
  • 6.取其中一个面团擀成长方形
  • 7.从上端慢慢卷下来,收口处收紧。
  • 8.将两条面团整齐的放入吐司模具中,放入烤箱进行2发(湿度80温度30)
  • 9.发酵至6-8分满,取出刷蛋液,缝隙中摆上一些黄油,预热烤箱(重蛋吐司膨胀力惊人,6分发即可,若想看到蘑菇云,8分即可。)
  • 10.烤箱预热180℃ 30分钟。或者170℃ 35分钟。吐司表面上色盖锡纸继续烤即可。
  • 11.组织非常非常非常的细腻柔软。
