Steps to make 醋泡柠檬凤爪

  • 1.凤爪洗净,剪去指甲,剁成三块。
  • 2.冷水下锅,加入茴香,八角,干辣椒,姜,葱结,桂皮,香叶,料酒,水开后小火煮五分钟左右。
  • 3.撇去浮沫,挑出大料和葱,姜,清水冲洗掉里面的胶质3-4遍,倒入冰水浸泡十五分钟左右。
  • 4.葱,蒜,小米椒,香菜切碎,柠檬切薄片备用。
  • 5.大碗倒入白醋,陈醋,生抽,老抽,耗油,放入切好葱,蒜,香菜,小米椒,柠檬片。
  • 6.凤爪沥干水,放入大罐子里,倒入之前的酱汁,加入白糖,盐,加入泡椒,倒入少量的泡椒水,淋上香油,辣椒油,花椒油,搅拌均匀,盖上盖子,冰箱冷藏一天。
  • 7.中途搅拌一次,泡上一天就可以开吃了。
