巧克力马卡龙
马卡龙(Macaron)又称法式小圆饼,是一种用蛋白脆饼为基础的法式甜点,这种甜点的主要材料很简单,不外乎是蛋白、糖粉、杏仁粉等制成饼干,夹上各种甘纳许馅料而已。
马卡龙的材料不复杂,手法才是关键,手法是练出来的,在通往甜点殿堂的途中,马卡龙就是综合技术与风味、感性与理性的最终试炼。
马卡龙饼干有着薄脆纤细的外表和微妙起伏的小裙摆,这些固然是挑战,但她美味的关键最终来自饼干与内馅的搭配,二者结合才算称得上完美的马卡龙!

  • 细砂糖10g(1)
  • 蛋白粉0.5g
  • 纯净水22g
  • 细砂糖80g(2)
  • 蛋白40g(2)

Steps to make 巧克力马卡龙

  • 1.杏仁粉、糖粉、盐混合搅拌均匀;
  • 2.可可粉加入蛋白(1)36克;
  • 3.搅拌均匀成可可糊;
  • 4.将混合粉类倒入可可糊碗里;
  • 5.压拌均匀备用;
  • 6.蛋白(2)40克,加入细砂糖(1)10克,蛋白粉0.5克;
  • 7.打至硬性发泡,有坚挺直立的小弯钩;
  • 8.将水、细砂糖(2)80克,小火慢慢加热煮至118度,细砂糖要全部溶化;
  • 9.分3次沿盆壁倒入正在打发的蛋白(2)中,高速打发降温,打至如图状态,这一步速度太快了来不及拍照;
  • 10.取1/3蛋白霜倒入面糊里,用橡皮刮刀压拌均匀;
  • 11.面糊比较干;
  • 12.再取1/3蛋白霜倒入面糊,切拌均匀;
  • 13.最后的1/3蛋白霜倒入面糊,J字拌匀;
  • 14.面糊湿润一些了,颜色一次比一次浅;
  • 15.准备一个杯子套上裱花袋,倒入面糊;
  • 16.用卡子夹紧开口;
  • 17.烤盘铺上马卡龙硅胶垫,裱花袋底部用剪刀剪出小口,按图案大小用裱花袋挤出圆形;
  • 18.只有二个烤盘,剩下的面糊放冰箱里冷藏,水平托起烤盘,轻拍烤盘底部,使面糊稍微摊开;
  • 19.烤箱只开上火50度热风晾皮15分钟,手摸面胚不会粘手指,不用取出上下火145度中层烤16分钟出炉。
