脆腌黄瓜
初秋,黄瓜快下架了。喜欢那脆脆的感觉,尽量把脆脆留下吧。
这是非常简单的一道腌制菜品。

  • 黄瓜3斤
  • 尖椒5支
  • 大蒜3头
  • 鲜姜1大块
  • 芹菜1棵
  • 腌制盐50克
  • 大料5粒
  • 20克
  • 色拉油50克
  • 酱油100克
  • 花椒约40粒

Steps to make 脆腌黄瓜

  • 1.黄瓜纵向切条,一分为四。放入盆中。
  • 2.撒入腌制盐,拌匀。
  • 3.上压重物。我是用不锈钢盆装入清水,压在上面。
  • 4.腌制12小时。水分基本腌制出来。
  • 5.尖椒洗净刨开,去籽。
  • 6.尖椒切大块。
  • 7.大蒜切片;鲜姜切片。
  • 8.芹菜洗净,切段。
  • 9.将腌制好的黄瓜、芹菜、大蒜片、姜片码入盆中。
  • 10.炒勺烧热放油,放入大料、花椒,炸香。倒入酱油。放入白糖。加适量水,烧开。
  • 11.将烧好的腌制卤料倒入码好黄瓜的盆中,盖盖儿腌制12小时。脆脆的腌制黄瓜大功告成了。
