快速发面法/腐乳红油一窝猴
给明天早上做的早点所有大晚上出锅了,光线的原因请忽略手机拍照的效果。只需要十几分钟面团就成功发酵!再也不用发愁面团发酵的时间那么长,大冬天只要家里有暖气、室温下就能发酵,我试做了两种面食,西式的披萨和中式花卷都忒棒,方子里的花卷是用腐乳和老干妈辣椒油做的馅料,很好很好吃,有喜欢的亲可以跟着我一同试试了。

Steps to make 快速发面法/腐乳红油一窝猴

  • 1.面粉倒入盆中、加入泡打粉搅拌均匀;
  • 2.温水倒入容器中,加入酵母和砂糖拌匀静置2分钟;
  • 3.倒入面盆中、用筷子搅拌成绵絮状;
  • 4.揉成光滑的面团,盖上保鲜膜发酵十分钟左右(我厨师机揉面三档7、8分钟);
  • 5.盖上保鲜膜发酵至两倍大,发酵好的面团用手扒开有明显的密集气泡;
  • 6.发酵好的面团再揉几分钟、排出面团中的气体揉圆(我用厨师机揉了6、7分钟);
  • 7.下面是我爸那儿学来的传家制做方法哈!取出面团平均分成两个大面团;
  • 8.将其中的一份大面团平均分成八份小面团、分别收圆备用;
  • 9.另一份大面团用擀面杖擀成长方形面片(这一步擀的越薄越好);
  • 10.腐乳和辣椒油混合后搅拌均匀(我用老干妈辣椒油和腐乳混合,因为腐乳含盐量较高所以就不用再放盐了);
  • 11.均匀地涂抹上在面皮上;
  • 12.卷成长条状(这一步擀的细长一些哈!)
  • 13.全部切成小块;
  • 14.切好的面团分成八堆;
  • 15.将八个揉圆的小面团全部擀成圆面皮;
  • 16.取其中一堆切好的小块放在面皮上;
  • 17.像包包子一样包好;
  • 18.捏紧收口;
  • 19.收口向下,依次完成每一个;
  • 20.起蒸锅倒入适量的清水,将包好的一窝猴排入蒸锅的龙屉上,盖上锅盖再次醒发15分钟,发酵好的花卷用手捏起来空空胀胀的;
  • 21.大中火蒸至25分钟左右,关火后再焖三分钟取出;
