与时俱进的三仁月饼
今年的五仁月饼实在是被吐槽太多,差点被赶出了月饼界,甚至引发微博之争,出现了 "黑五"派与"挺五"派,其实是哪派没必要争,几仁无所谓,关键是吃自己喜欢的,不喜欢的为什么也要放呢?当然这是自己敢diy月饼的人说的。我喜欢瓜子和芝麻,所以就放了黑白芝麻和瓜子三仁,叫两仁也可啊,黑白芝麻算一种。做了小巧玲珑的几个,吃起来好与压力哟。

Steps to make 与时俱进的三仁月饼

  • 1.水油皮的料都放入小盆。
  • 2.先用筷子搅拌均匀。
  • 3.用手不停揉水油皮,直至可以拉出薄膜。
  • 4.再次揉圆放保鲜袋静置30分钟。
  • 5.再次揉圆放保鲜袋静置30分钟。
  • 6.油酥揉匀,这个时间短些,同样放保鲜袋静置。
  • 7.饧面团的时间做三仁馅。花生油烧熟放凉。
  • 8.干燥的炒锅放入糯米粉小火炒熟,表面发黄即可。最好用不粘锅。
  • 9.准备熟芝麻和瓜子仁。
  • 10.准备冰糖。
  • 11.芝麻瓜子仁和熟糯米粉混合。
  • 12.先混合均匀再加入熟花生油。
  • 13.放油混合均匀后,放入冰糖。
  • 14.团成约15克的小圆子。
  • 15.水油皮和油酥搓成条各分成15克和10克的小剂子。
  • 16.水油皮小剂子滚圆按成皮,油酥滚圆,放在水油皮上,包起来收紧口。
  • 17. 擀成牛舌状,卷起。
  • 18.继续擀成牛舌状卷起,重复3次,最后一次擀成圆形。
  • 19.取一馅放到酥皮上。
  • 20.慢慢向上收口包起,而不是和包包子一样直接包起。 收口朝下按扁。
  • 21.依次做好所有,排入放油纸的烤盘,表面刷一层鸡蛋液。
  • 22.烤箱180度上下火预热后,放入月饼生坯烤约20分钟。
