红烧武昌鱼
以前我是不爱吃鱼的,但老公爱吃,所以就上美天捜罗各种做法,发现红烧的红还是挺美味的,饭店的菜都是各种调料,我喜欢保留食材的原味,调料就加的少啦,操作也简单。

  • 武昌鱼1条
  • 大葱1棵
  • 2个
  • 1段
  • 生抽3勺
  • 老抽1勺
  • 0.7勺
  • 料酒1勺
  • 蚝油1勺
  • 200ml

Steps to make 红烧武昌鱼

  • 1.鱼洗净两面各划三刀,方便入味。(别划太深,避免煎的时候断了)
  • 2.葱姜蒜切好备用
  • 3.起锅放油烧热,把鱼从尾把拎起来滑入锅中(这样放不会被油溅到)
  • 4.煎三分钟再翻过来煎三分钟(我喜欢煎久一点感觉比较不腥)
  • 5.在煎鱼的时候可以调汁,(我比较懒,直接用装鱼的盘子调了。)
  • 6.盐,蚝油,生抽,老抽,料酒,葱姜蒜放一半,加水(调料的量根据个人口味添加哈)
  • 7.另外一半葱姜蒜放在鱼边上爆香一下。(也可以先把煎好的鱼捞出来)
  • 8.倒入调好的汁,(我煎鱼只翻了一次面,第二面不用翻,直接倒汁)
  • 9.倒完汁用锅铲稍微动一下鱼避免粘锅,因为我刚才没翻面,
  • 10.盖上盖子大火烧5分钟(时间视水的情况定)翻一下面,继续烧
  • 11.烧至水快干了,如图,撒上葱尾,
  • 12.出锅,装盘。
  • 13.慢慢享用吧
