凉拌折耳根
折耳根,又叫鱼腥草,是云贵川地区的特产,药食同源的天然食材。着凉上火嗓子疼,喝几剂鱼腥草药剂就见效,民间也常用鱼腥草根即折耳根煮水饮用。

之所以叫鱼腥草,是因为其特殊的气味像极了淡水鱼身上的腥气。别看鱼腥草冲剂或者口服液甜甜的挺好喝,但其实原材料可不是所有人都能接受的,尤其是第一次食用它的北方人,十人得有九人要崩溃,没吐在饭桌旁那真是忍了又忍,耐力极高的了。

由于地理环境的原因,云贵川的饮食口味都偏辣,所以原本是清热的鱼腥草在制作成凉菜时也往往放上辣椒这些开胃的材料。

  • 大蒜4瓣

Steps to make 凉拌折耳根

  • 1.折耳根清洗干净,剪掉关节上的小须子,这样看上去会清爽;杭椒口感清香鲜嫩,辣度合适,红色的小米辣增辣添色,大蒜和小葱是凉拌菜必备小料,尤其夏天可以多食用一些。
  • 2.折耳根剪成2公分小段。
  • 3.大蒜剁碎,辣椒切小圈,小葱切段。
  • 4.与折耳根同入大碗中。
  • 5.倒适量生抽、醋、少许盐、少许白糖拌匀;加辣椒油或者香油均可,如能腌时一会儿充分入味,食用口感更佳。
  • 6.凉拌折耳根,脆嫩爽口又开胃!
