  • 玉米淀粉40克
  • 吉士粉20克
  • 泡打粉12克

Steps to make 拔丝香蕉

  • 1.香蕉切小块
  • 2.调个脆炸糊:加入适量的面粉和玉米淀粉(面粉淀粉比例3:1 )20克吉士粉没有可不加,10克泡打粉1茶勺油1点点盐
  • 3.加适量的水调成酸奶状的糊
  • 4.香蕉表面均匀裹层淀粉或面粉
  • 5.把香蕉放入调好的糊里,也可一个一个放
  • 6.锅中放油烧至五六成热放入香蕉炸至,炸到金黄色捞出
  • 7.炸好捞出备用
  • 8.锅中放适量的白糖和水比例3:1
  • 9.小火炒到糖密集冒大泡转冒小泡,糖的颜色也全部渐变成金黄色就差不多了
  • 10.简单的测试方法,盘子里放些凉水,用勺子滴几小滴糖浆在水中,糖浆迅速变为脆脆的糖片尝一下嘎嘣脆即可(拔丝零失败)
  • 11.迅速倒入香蕉块裹匀糖浆
  • 12.出锅装盘即可,盘子底部提前抹层油撒层熟芝麻。成品图
