广式五仁月饼
前一篇菜谱里做好了五仁馅,今天我们来做广式五仁月饼。

  • 面粉200克
  • 吉士粉10克
  • 50克
  • 转化糖浆150克
  • 枧水2克
  • 五仁馅1000克

Steps to make 广式五仁月饼

  • 1.把转化糖浆倒入盆里加入枧水,油搅拌均匀。
  • 2.筛入面粉和吉士粉。
  • 3.搅拌均匀。
  • 4.揉成团,包上保鲜膜静置2个小时。
  • 5.称出一个饼皮的重量,大约22克。
  • 6.再称出一个馅的重量,大约53克。
  • 7.把饼皮和馅料分好后,用饼皮包住馅料。我用的75克模具,按3:7比例包的,饼皮能做19个。如果按2:8比例包能做20个。
  • 8.一圈一圈的推着包。
  • 9.包好后的样子。
  • 10.模具内沾一层面粉,抖掉多余的,薄薄一层就行,月饼也沾一层面粉。
  • 11.把月饼放入模具内,压平。
  • 12.轻轻压出来即成。
  • 13.做好的月饼生坯样子。
  • 14.在月饼表面喷水,放进预热200度的烤箱内。
  • 15.烤5分钟月饼定型后,刷上一层蛋黄水(取一个蛋黄加少许清水),只在表面就行,再烤15分钟即可
  • 16.烤好的月饼放两三天回油后再食用。
