干烧鱼
此方法可适合干烧大部分鱼类都可以,这次我用的是带鱼

Details of ingredients

  • 带鱼200克
  • 一段
  • 一块
  • 蒜子三四粒
  • 郫县豆瓣酱一汤勺半
  • 醪糟汁三汤勺
  • 青蒜两根
  • 生抽半汤勺
  • 2勺
  • 一勺
  • 鸡粉一勺
  • 香油几滴

Steps to make 干烧鱼

  • 1.准备些处理干净带鱼和一点的五花肉备用
  • 2.葱姜料酒挤出葱姜汁
  • 3.带鱼两边切花刀然后放点盐胡椒粉和葱姜汁抓一会腌制15分钟
  • 4.腌好带鱼后上面稍微上一层薄薄的水淀粉,然后锅中做油烧至四成热炸带鱼,炸制金黄色干一些捞出
  • 5.炸好的带鱼待用
  • 6.切好葱姜蒜米五花肉切成丁
  • 7.锅中倒入底油放入一勺半的豆瓣酱加两勺料酒小火煸出豆瓣酱的红油
  • 8.然后放入葱姜蒜米和五花肉丁慢慢煸出香味
  • 9.然后放入带鱼加适量的水,刚没过带鱼就行,调入生抽半勺,醪糟汁三勺,鸡粉一勺,糖2勺,大火烧开转小火焖10分钟
  • 10.然后开大火收汁,收到汁只剩红油没有水份时才算收好汁如图,最后顺锅边烹入一勺香醋翻几下撒入青蒜粒在滴入几滴香油出锅
