腊八醋
腊八醋是传统腊八节习俗。在中国北方地区有在腊八这天用醋泡大蒜的习俗,名“腊八醋”。
腊八醋,要泡到大年初一,初一吃饺子,要吃素饺子,取一年素素净净之意,蘸腊八醋吃,别有一番滋味。
古老的传统美食“腊八蒜”制作中会产生绿色素。传统民间很多家庭有制作“腊八蒜”的传统,在腊月将大蒜去皮、洗净、剥瓣,倒入米醋,封入小坛,除夕时开封,就做成青翠宜人、蒜香可口的“腊八蒜”。“腊八蒜”制作过程不见阳光,产生的绿色并非叶绿素,而是大蒜绿色素。

  • 1.天立老醋两瓶,每年都用这个。
  • 2.大蒜备好。
  • 3.剥去外皮。
  • 4.取无水无油的干净玻璃瓶,先把醋倒进去,再把蒜瓣放入。
  • 5.密封,年前吃刚刚好,约二十天吧!
