酸奶蛋糕
吃腻了戚风蛋糕,总想换换口味。这款酸奶蛋糕算是改良的戚风吧,里面的配方颠覆了传统戚风里固体和液体的比例,吃起来极其松软细腻,有点入口即化的感觉,而热量又减少了。所以经常推荐给朋友做,无一不是称赞她的松软可口,是一道极好的早餐或点心。

  • 细砂糖35克

Steps to make 酸奶蛋糕

  • 1.蛋黄蛋白分开装
  • 2.搅拌均匀后筛入低粉
  • 3.低粉均匀分布
  • 4.搅拌均匀后先放置一边
  • 5.现在打发蛋白。用电动打蛋器低速打发。等到有鱼眼泡时倒入1/3细砂糖
  • 6.打到细泡出现时倒入1/3细砂糖
  • 7.打到有轮廓时倒入最后的1/3细砂糖
  • 8.用高速搅拌,打到湿性发泡,就是尖角会下垂时继续搅拌
  • 9.打到干性发泡,即尖角直立,倒扣容器不会往下掉时即可,全程大概2分钟时间。
  • 10.蛋黄蛋白混合,用左右搅拌的方式混合
  • 11.烤箱预热5分钟,用水浴法,烤箱175度,上下管加热35分钟
  • 12.出炉后将模具倒扣,酸奶蛋糕很好脱模,倒扣一会儿后会自动掉下,如果没有掉下,用手振一下模具也会掉下
  • 13.成品,整个过程用时15分钟+烤35分钟。
