记忆深处的一道凉菜——【黔味凉拌茄子】
我记得小时候,没有现在的大棚种植、温室栽培、、、各类蔬菜、瓜果不像如今这样一年四季都有,那时候蔬菜的季节性很强,我们吃的都是些当季菜。而茄子、青椒、番茄是我们贵州夏天的当季菜,所以一到夏天,我们贵州很多菜都用这三种材料做,不是青椒炒XX、青椒番茄炒XX,就是各类烧茄子,就是三者全用上的都有,怎么做呢青椒番茄炒茄子和凉拌茄子,这两种做法,我最爱的就是凉拌茄子。

那时候我们贵州几乎还没有用上燃气炉做饭,都是生煤火,每家每户都有一个网格的烤架,冬天烤糍粑,夏天烧辣椒啥的,这烧过的辣椒、茄子拌上熟透的番茄,很爽口哦。后来渐渐的,我们都换了燃气炉,这在家里烤辣椒啥的就不方便了,爱吃烤辣椒的贵州人,怎能这么作罢了呢,于是一到夏天,市场上就多了一些专做烤辣椒、茄子生意的小贩,而且还不少,即使卖的人多,但一到买菜高峰期忙都忙不过来。为啥这么好卖,除了做凉拌茄子外,我们还用烧辣椒和熟番茄一切拌成蘸料,这可是我们贵州人夏天爱吃的煮素豇豆小南瓜啥的必配的阿。

其实这凉拌茄子,全国各地做法很多,这几年我也相继吃了不少,但我还是喜欢我们贵州的这种拌法,茄子配上辣椒烤过后那种特有的味道,真是让人怀念。我没地方烤,更没地方买,还好有个烤箱,味道虽会稍差些,但也还能解解馋。

Steps to make 记忆深处的一道凉菜——【黔味凉拌茄子】

  • 1.将茄子、青椒、番茄洗净沥干水分;
  • 2.青椒、茄子分别用烤箱烤熟;
  • 3.番茄分别隔水蒸熟;
  • 4.放凉后,用勺子将番茄捣碎;(皮不要)
  • 5.青椒和茄子分别用手撕成条;
  • 6.蒜切成末、葱切成葱花;
  • 7.将青椒、茄子、番茄全部倒入一个相对大的容器,并方入葱蒜;
  • 8.调入适当的盐、糖、生抽、醋拌匀;
  • 9.装盘即可上桌。
