Steps to make 绿豆戚风蛋糕

  • 1.蛋黄糊的制作:食用油倒入牛奶中,用打蛋器搅打乳化,乳化后会变得黏稠。
  • 2.加入10g糖和5个蛋黄,用打蛋器搅打匀
  • 3.然后加入绿豆沙搅打均匀。
  • 4.筛入低筋面粉, 用刮刀翻拌均匀,也可以切半。这时候开始预热烤箱至140度。
  • 5.蛋白的打发:将50g白砂糖分4次加入蛋白中,打发至硬性发泡,使拉起来的时候呈小山角
  • 6.将三分之一的蛋白放入蛋黄糊中,从底部捞起翻拌匀,搅拌好的面糊全部倒入蛋白中,快速翻拌和切拌。
  • 7.将面糊倒入6寸模具中,将模具用力震几下,震出面糊中的气泡。(两个六寸的量)
  • 8.放进预热好的烤箱。140度,55分钟
  • 9. 蛋糕出炉后稍微轻震两下,防止回缩,然后立即倒扣晾凉,完全晾凉后,用手直接脱模
