Steps to make 泡椒鸭胗

  • 1.鸭胗用麻辣鲜、胡椒粉、姜粉和淀粉腌制10分钟。
  • 2.我用的尖椒是我们本地的,特意给大家看一下,以免大小有误,将其洗净横切成圈备用。
  • 3.泡椒切小丁,姜蒜切碎。
  • 4.炒锅放适量油,烧至五成热,下泡椒、姜蒜炒香。
  • 5.放鸭胗同炒,炒至变色、无汤汁的时候,放白酒,炒匀即可出锅。
  • 6.炒好的鸭胗出锅备用;
  • 7.炒锅洗净再放少许油,七成热时倒入尖椒,这样做的目的是为了成品中辣椒的样子更清爽好看。
  • 8.尖椒爆香,再倒入之前炒好的鸭胗和少量泡椒水,炒匀。
  • 9.依次放入老抽、盐和鸡精,炒至尖椒断生即可出锅。
