Steps to make 草莓汤圆

  • 1.草莓洗净去蒂,榨成汁。
  • 2.草莓汁+适量白糖+几滴柠檬汁+2勺淀粉+2勺椰子油/黄油/猪油(这三种油的共同点是冷却结晶、温度高融化)小火不停搅拌煮到微微粘稠。
  • 3.装容器里,等待冷却。
  • 4.揉成小球,冰箱冷冻到硬。
  • 5.准备皮:70g糯米粉+25g木薯粉+10g橄榄油搅拌均匀,倒入80g开水烫面,和成面团密封静置二十分钟。也可另取紫薯等做其他颜色皮。
  • 6.不同颜色面皮叠加、卷起来,记得卷紧。
  • 7.切成面剂子,用手按稍薄。
  • 8.取草莓球包进来,虎口收紧封边。草莓球最好一次只拿出来几个,草莓球冷冻状态足够硬才好包。
  • 9.包好的汤圆下锅煮熟。
  • 10.成品图。吃不完的汤圆可裹生糯米粉冷冻。
