【四川肉臊子面】初秋的开胃好面
朵儿自己超级爱吃面条,天天吃都不会吃伤,今天这款面条是我非常喜欢的,我自己也不知道这款面条到底叫什么,我是叫他肉臊子面,哈哈。是跟一位外婆学的,人家是老成都人。不过不得不说,成都的面条真的好吃,上次去成都天天吃面条就吃的我非常Happy,哈哈哈。唉,不得不承认自己还是一个口重的人,不是说多能吃盐,而是我喜欢算算辣辣的感觉,特别过瘾。

    Steps to make 【四川肉臊子面】初秋的开胃好面

    • 1.热锅凉油,将花生油烧至5成热(油量稍微大一些,豆瓣酱和肉馅都需要有油才香),调至中火,倒入豆瓣酱,慢慢炒香。
    • 2.豆瓣酱炒香后倒入肉馅,将肉馅炒香炒熟。
    • 3.当肉馅完全分散成肉粒状后放入姜末,炒均
    • 4.放入蒜末,炒5-10秒的时间就可以明显闻到蒜香味儿。
    • 5.最后放入准备好的碎米芽菜,中火炒制3分钟。关火。待吃!
    • 6.调制底汁,不用太多,有个碗底的量就可以。准备一个吃面的碗,放入生抽,鸡精,胡椒粉,香葱,高汤(或开水)。
    • 7.煮面(用煮面的水兑到底汁里面也可以)。面熟后捞出放入盛有底汁的碗里(根据需求选择面条是否过水)。
    • 8.放上黄瓜丝,肉臊子卤,来点醋调调味道,开吃!
